      <image:caption>I included the ravioli ubiquitous to the Italian island that Pablo Neruda nicknamed "The Pearl of the Mediterranean in my Italian Recipes for Dummies cookbook as well. I'm also planning on pairing the dish with a Cirò DOC red wine from Librandi. Made from one of the most ancient indigenous grapes to Italy, the Gaglioppo,  this bold and bright wine is the perfect accompaniment to the rich and sunny aromas that the ravioli evoke. Interestingly, wine made from this grape was once served to the Greek Olympic champions and the Calabrian ingenuity was so admired by the Greeks that they named Calabrians the "Oenotri" or "The Wine Cultivators" in Greek.       <image:caption>Many of you are familiar with the saying "In vino veritas," or, "In wine there is truth." But I always joke that "In Vinitaly veritas" because attending  the four days of major events, technical sessions, prestigious  tastings, theme areas, and adjacent shows is such an eye-opening experience for me. This year was no exception, and in honor of National Wine Day, I wanted to share a little bit of what I learned from this year's unforgettable experience. Wine is often described as bottled poetry, and to understand it properly, it never hurts to have poetic translators by your side. At this year's show I got to spend a day with my dear friend Dr. Sante Laviola, who casually and effortlessly describes wine in the most beautiful way I have ever heard. The opening quote at the top of this post is an excerpt from a text message that he sent me after an afternoon wine tasting. His knowledge and love not only of wine, but of Italian heritage and soil seeps through every word he writes, and it is for this reason that I am thrilled to have collaborated with him on Italian Recipes for Dummies where he carefully paired each of my recipes with natural Italian wines. Forming new business alliances, making new friends, and connecting with so many industry leaders in such a short time is virtually impossible anywhere else. It also provides the perfect opportunity to reconnect with longtime friends and colleagues, taste their latest harvests and vintages, learn about new products, market trends, and more. The minute I knew I would be able to attend this year's expo, I immediately contacted my longtime friend Paolo Librandi, of Librandi wines, to taste his Megonio,  the wine that the Associazione Italiana Sommelier named "Wine of the Year" for 2022.</image:caption>

      <image:caption>It makes me so proud that the Magliocco grape,  indigenous to my ancestral homeland of Calabria holds the "Wine of the Year" title and that the Librandi family was able to, for the first time, put Calabria back on the wine map that the ancient Greeks first created when they named us the Oenotri, or the "wine cultivators." Hailing from Umbria, a region whose slogan at Vinitaly was "sips of happiness," their fantastic wines were just featured in CNN's Searching for Italy program with Stanley Tucci during the Umbria episode.</image:caption>

      <image:caption>For those of you who have spent any time at all in Umbria, you will immediately recognize both its distinct soil and its Trebbiano Spoletino and Sagrantino. Pliny the Elder, in “Historia Naturalis”, describes the “Itriola”, a typical grape of the region, which according to several scholars is likely to be the Sagrantino grape. Other historical sources assume that the vines were imported from Minor Asia by the followers of Saint Francis of Assisi. From 1540 a communal decree officially established the registration of grape harvest in Montefalco.</image:caption>

Through years of leading tours to the region I have been able to taste its' finest wines and note the differences in taste and technique. The term, "Montepulciano d'Abruzzo," for example, means different things depending on who makes it and how it is made. In Abruzzo, I had the pleasure of enjoying an exceptional version that I could happily drink every day for the rest of my life.  After this year's expo I was able to spend time at the Martelli family's vineyard, where the owner, Domenico Martelli shared some of his secrets to success with me.</image:caption>

      <image:caption>I was already aware of the Martelli family's commitment to producing honest and genuine extra-virgin olive oil, because they make my Amy Riolo Selections blend for me. This, however, was the first time I was able to taste their wine with them. Domenico explained that the strong differences between the climate during the days and nights in their vineyards, combined with good ventilation guarantee the vines an ideal microclimate for growing and producing grapes of extraordinary quality.</image:caption>

      <image:caption>The Martelli family's Montepulciano d"Abruzzo DOC and Pecorino terre di Chieti Igt are award-winning examples of the maximum expression that these two indigenous grapes can provide. Another favorite of mine is the Cerasuolo D'Abruzzo DOC, a rosé with the heart of a red that is delicious to drink and a game changer for many of our American travelers to the region. Each of these wines is the perfect accompaniment to both the land and sea components of traditional Abruzzese cuisine, and has the ability to pair well with a wide variety of international dishes as well.</image:caption>

      <image:caption>Their San Michele Frappato was a huge hit with our American delegation, as was their exceptional Nero d'avola  An unexpected delight for me to taste was their Conte Ruggero, an IGT Sicilian red made from the Petit Verdot grape. I had never heard of using this grape in Sicily, so I had no expectations whatsoever when I first tasted it. To my surprise, though, it was really delightful. Its taste was fine and elegant, full of personality and dotted with mature red berry and fruit flavors. Owner and winemaker Elio Savoca shared the 900 year history of the winery with me and explained why he named this wine after one of Sicily's most important historical figures.       <image:caption>Finally it was time to taste the sweet stuff. Despite my love of Amaro and Limoncello, I had to save the best for last because it is hard to kick off a day full of meetings with a digestivo, no matter how alluring they may be. So each day I would fight my urge to sip Amaranca "The Nobile Amaro of Etna."  The explosions of aromas and flavors coming from this amaro was worth my trip to Verona alone. Even though I am now back in the states, I still happily sip Amaranca, the Sicilian bitter liqueur obtained from wild Sicilian oranges and medicinal herbs and roots grown on Etna's slopes nightly. Apparently, I am not the only one, because this liqueur holds two gold medals from the World Liqueur Awards in London.</image:caption>

      <image:caption>Limonetna, Limoncello made from lemons grown on the slopes of Mount Etna, really sets the bar high for the lemony liqueur. Each sip is as bold and beautiful as its' gorgeous bottle, which happens to match my kitchen perfectly! It is the first liqueur to be made with the IGP lemons from Mt. Etna, and is the winner of the Bronze award at the International Wine Spirits Competition. This sunny classic from the Romeo family will always be in style, offering a sip of the Sicilian sun - and a key to unlocking the limitless potential of authentic Italian flavors.</image:caption>

      <image:caption>The last Sicilian flavor I tasted during the Vinitaly festivities was the Marsala by Florio at the closing night's awards dinner at the Verona arena. Legend has it, the owner warned, that whoever drinks their Dolce Superiore 2017 "will fall in love." After one sip, I was a believer, and can attest that this Marsala will be a game changer for anyone who never fully appreciated it before. And as for falling in love, I will keep you posted, but in the meantime I like to think that "love is not an emotion, it is our very existence," as the great Rumi said. Perhaps the wine and luscious spirits we sample at Vinitaly  just help to make us realize the truth sooner.</image:caption>

This ancient region was originally inhabited by the people whom the Greeks called Oenotri  or “The Wine Cultivators,” and another group, the Itali,whose name eventually named Italy itself. The wine from the same soil that Librandi wine operates from has a story that goes back millennia, and it was their wines that were served to the champions of the Olympic games in ancient Greece.</image:caption>

      <image:caption>In modern times, the wines of the Italian South are just beginning to be appreciated with the same reverence that the ancient Greeks had for them. Since the 1950’s, the Librandi family has dedicated themselves to producing the best quality wine that the region has to offer. Dr. Nicodemo Librandi, whom I had the pleasure of visiting on several occasions and formally interviewing in this clip years ago, has passionately spent his career researching and preserving ancient indigenous varietals that would have otherwise been lost. In addition to the many accolades that Nicodemo, his family, and the winery have accumulated over the years, the agricultural masterpieces of biodiversity that they are guaranteeing, and the economic growth that they are providing to our region, the Librandi family have consistently provided a tangible piece of Calabria that could be enjoyed all over the world. What matters most to me, however, was the sense of pride, place, and purpose that holding a bottle of their wine provided me and many others.</image:caption>

      <image:caption>When I was growing up in New York State, a Calabrian-American, there were no other items that I could hold, or purchase, which told the story of my ethnic origins. Despite the fact that ¼ of Italian-Americans have Calabrian roots, most people (including the Italian-Americans) knew nothing about Calabria. Thanks to Librandi’s success, their wines were widely distributed in the US and abroad. With a bottle of Cirò Rosso in my hand, I could easily begin a conversation about the splendors of Calabria with my friends, my colleagues, and the public.</image:caption>

A sip of their wine told the story of our Greek roots, our Byzantine name, deep history of viticulture, and modern technological and business savvy which put the wine both on the market and the modern map. Best of all, to me, the wine brought me back to a place that was home in all senses of the word. Driving south in Italy from Rome, we have to pass through Cirò Marina, where the Librandi Winery is located to get to the nearby city of Crotone (Kroton in ancient times) where my parents’ family hails from in order to visit relatives.</image:caption>

      <image:caption>After hours of driving through the mountains, arriving in Cirò meant seeing the Ionian Sea, smelling the same air that my family does and ancestors did, and retracing the steps that my Great-Grandfather never got to return to. Each time I visit the Librandi Winery, I’m reminded of all of those things while feeling an enormous sense of pride and nostalgia simultaneously. Their winery represents the eno-gastronomic bridge that has been connecting my family for a century both in the US and Italy. When I first sat down with Dr. Nicodemo Librandi to interview him about the winery’s history, he joked with me and said to me in Italian; “I’ve been all over the world promoting my wine, and I don’t speak a word of English.” We laughed, but I very quickly replied, “You don’t need to, this wine speaks for itself.” I’m a very emotional person, and in lieu of a formal wine education (which I must admit has grown quite a bit since I started surrounding myself by Italian Sommeliers) I believed Librandi wines to the best because they were the most meaningful to me.</image:caption>

      <image:caption>Megonio, the wine named the best in 2022 comes from Magliocco grapes, a historical Calabrian variety that is cultivated in the valleys. It’s a highly structured red wine that represents the best of the essence of our land itself. In 2019, just before the lockdown, Paolo was in Washington, DC conducting wine events (click here to see the video), and he shared with me that the name Megonio, comes from the Roman centurion of the same name who lived in our lands in the second century CE and which was the first to leave written traces of our viticulture.</image:caption>

      <image:caption>For those reasons, my attention has shifted to gingerbread - not the cookies that are normally associated with Christmas, but the loaves that were introduced to Europe from the Eastern Mediterranean. Even though we know consider gingerbread to be an English or American type of sweet treat, its' roots are definitely global. In 16th century England, during the Elizabethan era, lexicographer John Baret described gingerbread as a cake made to comfort the stomach. In the United States, the recipe can be traced back to George Washington's mother who made the batter into eagle-shaped cookies.</image:caption>

The UNESCO protected art of pizza-making is what Neapolitans are most known for, but truth be told, that’s just the tip of the culinary iceberg that this ancient metropolis has to offer. With Stellina's Chef Matteo Venini andMaestro Pizzaiolo Antonio Fusco One of the lesser known edible delights born out of Napoli is Pizza Fritta, or “Fried Pizza,” a tradition that I’ve loved since childhood. For many Italian-Americans, pizza fritta refers to fried pizza dough that is served sweet – topped with powdered sugar. It’s served at carnivals, street festivals, or often after making pizza at home. Sometimes the term is used to refer to fried zeppole, also believed to be the original pizze fritte, which are small pieces of dough, fried and topped with powdered sugar, or at holiday time stuffed with anchovies, fried, and served as an appetizer during holidays.</image:caption>

Antonio's task was to create Montanare and Pizze Fritte for the events we held at the James Beard House in NYC and at Stellina Pizzeria in DC.  I had already met Antonio at Ristorante del Pino (a food emporium like none I've ever seen) in Naples where he heads the pizza department prior to his arrival in the states, so I knew I was in for a treat. Antonio is truly committed to his art and stops short of nothing to deliver the best results. His fried pizzas are light and airy - with the perfect combination of fillings that leave you begging for more.</image:caption>

This ancient festival commemorated the Spring Equinox and believe it or not, may of our "modern" and "Christian" traditions were inspired by those. Read more about that holiday here.       <image:caption>Serves: 6 | Serving Size: Approximately 3/4 cup Prep Time: 15 minutes | Cooking Time: 0 minutes Italians do not typically eat large salads for a meal the way that Americans do. Instead, salads are usually served at the end of a meal to cleanse the palate, or as part of a series of appetizers when dining out to whet the appetite. Some traditional Italian salads, however, are so satisfying when prepared with fresh, seasonal produce that they could almost be eaten alone. And this one is no exception. If I ever have any of this salad left over, I toss it with hot pasta the following day.  1 pound artichokes, cooked and roughly chopped  12 ounces Roasted Peppers (page 282)  1 pint yellow grape tomatoes 1/3 cup Extra virgin Olive Oil by Chef Amy Riolo 1/4 cup balsamic vinegar (preferably Aceto Balsamico di Modena) or red wine vinegar 2 tablespoons finely chopped fresh basil or flat-leaf parsley 1/4 teaspoon unrefined sea salt 1/4 teaspoon freshly ground black pepper 1. Combine artichokes, roasted peppers, and grape tomatoes in a large salad bowl or on a platter. Stir.  2. In a small bowl, whisk olive oil into vinegar until emulsified and stir in basil or parsley.  3. Drizzle dressing over vegetables. Taste, and season with salt and pepper. Serve.</image:caption>

In the restaurant world, we often call wine-pairing menus, "wine-forward" which means that the food almost takes a backseat to the wines - it goes with them, but the wines still shine a little more.  Other menus are more "food-forward" meaning that the chef plans the food first, and then the wines are paired with the food.</image:title>

Chef Matteo, along with wine importer and distributor Maurizio Farro of Cantiniere achieved that perfect synergy between the food and wine which, like in any good marriage, allows the couple to shine brighter together than when they are on their own - no matter how great they are as individuals.</image:title>

      <image:title>HOME - “Sapori di Sicilia” at Stellina - It's worth noting that tonight's dishes  themselves where not items normally found on Stellina's menu, nor were they 100% traditional - meaning that Chef Matteo went way above and beyond his duty to create his updated interpretations of the dishes.  Some of you may remember my Pasta alla Norma from my cookbooks, or how I made it with my Greek culinary tour travelers in Ikaria after taking them to see the opera "Norma" in Athens.  The eggplant, tomato, and ricotta pasta is a family favorite, and therefore I take it very seriously. Chef Matteo's "La Norma" alla Stellina was an eggplant cannolo filled with sheeps' milk ricotta and cherry tomato sauce wrapped in a fried angel -hair pasta cone.</image:title>

This course showed Chef Matteo's ability to not only pair dishes with wine well, but also his innovative streak which inspires him to create new dishes using innovative techniques while pairing wines and balancing flavors.</image:title>

      <image:title>HOME - “Sapori di Sicilia” at Stellina - The next dish was Pasta con Sarde- an iconic Sicilian dish that Chef Matteo put his own spin on by using home made chitarra pasta. This dish can be tricky to pair, because it contains marinated sardines and fennel (both have strong, distinct flavors) as well as lemon (Italians never pair citrus with wine).  For many people, the highlight of the night was this  pasta dish paired with the Perricone "Soria" 2016.  Everyone agreed that while great on their own, both the wine and the pasta tasted better when enjoyed together.</image:title>

      <image:title>HOME - “Sapori di Sicilia” at Stellina - The main course, "Sapori di Sicilia" or "Flavors of Sicily" - a tender, satisfying, roasted octopus with pistachios, blood oranges, sea urchin, and chickpea puree combined many of the island's most beloved ingredients on a plate.  The Syrah "Altavilla della Corte" 2015 echoed the important notes that each element contained and proved that red wine and seafood can be a match made in heaven.</image:title>

      <image:title>HOME - “Sapori di Sicilia” at Stellina - The finale of the evening was "il classico cannolo" ...the classic cannoli...stuffed with sheeps' milk ricotta from Sicily -the shells are fried to perfection and filled just before serving as tradition mandates.  My favorite wine of the evening was the Passito "L'Ecru" 2014 that it was paired with. Passito is made with zibibbo grapes which are naturally dried and then pressed into a very light, slightly floral sweet wine which, due to its characteristically complex terroir, is the best I've ever tasted.</image:title>

I hate that question because even though my heritage is Southern Italian, I could not live without the cuisine of each of the countries of the region which I have come to know and love as much as my own.  But if forced to choose, I always say, I would choose the cuisine of Sicily. Since it's the largest island in the Mediterranean, its' flavors represent the entire region more than any other one place. The next time I get asked that question I will respond the same way, but I will add..."and I would pair the foods of Sicily with Firriato wines because they are the ultimate accompaniment to the foods that the lush culinary microcosm has to offer."</image:title>
